Cajun Cream Sauce
2 tbsp butter
1/4 cup flour
1/2 cup milk
3 cups heavy cream
6 tbsp grated parmesan cheese
3 tbsp Cajun seasoning

Pasta
4 boneless, skinless chicken breasts
2 tbsp Cajun seasoning
4 cups Cajun cream sauce
1 1/2 lbs linguini, cooked al dente, drained
1 cup diced tomatoes
1/4 cup sliced green onions
1/2 cup shredded parmesan cheese

Sauce: Melt butter and add flour, stirring until blended. Continue stirring for 3 minutes. Remove pan from heat and add milk and cream; whisking until well blended. Return pan to medium heat and continue to cook until mixture just begins to bubble up the sides of the pan. Remove from heat and add cheese and Cajun seasoning.

Chicken: Sprinkle with Cajun seasoning. Grill for 6-8 minutes.

Pasta: Pour sauce into large saute pan. Add pasta and toss with tongs to coat with sauce. Cook over medium heat about 30 seconds. Divide pasta among 4 serving plates, mounding up pasta. Slice chicken on the bias into strips and place on top of pasta. Sprinkle tomatoes, onions and cheese over each portion. Serves 4
