1 lb seedless cucumbers, partially peeled
1/2 tsp salt
2 tbsp packed brown sugar and cider vinegar
1/2 tsp light soy sauce and sesame seed oil
Split cucumbers in half lengthwise and cut on the diagonal into slices about 1/4 inch thick. Place in a bowl and sprinkle with salt. Toss and allow to stand for 15 minutes to draw out the liquid. Drain and transfer to a serving bowl.
Mix remaining ingredients into a small dish and whisk until sugar is dissolved. When ready to serve, pour the dressing over the cucumbers and toss well. Serve chilled or at room temperature.
