BAKED SPINACH DELIGHT - Easy

1 tbsp olive oil
1 (10 oz) pkg frozen chopped spinach, thawed, drained and squeezed dry
1/4 cup chopped onion or shallots
1/2 cup cream cheese
1/2 cup milk
1/2 cup grated parmesan cheese
Salt and pepper, to taste

Preheat oven to 350. In a skillet, saute onions until translucent. Add spinach and saute until just wilted. In a separate pan, mix milk and cream cheese until combined. Season with salt and pepper. Mix cheese mixture into spinach and spread into a baking dish. Sprinkle with cheese and bake for 12-15 minutes. Do not overly brown.

NOTE: Can be made ahead and reheated or frozen.
