CHICKEN AND PINWHEEL PASTA

2 whole chicken breasts
1 tbsp honey
1 1/2 cups orange juice
6 cloves garlic, peeled and left whole
12 oz pinwheel pasta, cooked al dente, drained
1 small onion, chopped
2 oz shiitake mushrooms, sliced
1/2 cup dry white wine and chicken broth
2 tbsp soy sauce combined with 2 tbsp cornstarch
1 tsp grated fresh ginger
2 tsp minced cilantro and orange zest, for garnish
Preheat oven to 375. Put chicken, skin side up, in a roasting pan sprayed with cooking spray. Mix honey with 1/2 cup orange juice and pour over chicken. Sprinkle garlic cloves around chicken. Bake for 30 minutes. Remove skin and discard. Dice chicken; set aside.
While pasta is cooking, make the sauce. In a saucepan, put onion, mushrooms, and 1/4 cup orange juice and cook until liquid evaporates. Add remaining 3/4 cup orange juice, wine, and next 3 ingredients. Cook over low heat, stirring until mixture thickens. Add chicken and drained pasta. Garnish and serve.
