Shelly's Recipe

OVEN FRIED BEEFY RICE

2 (14 1/2 oz) cans chicken broth
1 1/2 cups uncooked long grain rice
1 1/2 lbs ground beef
2 large onions
1 large green or red bell pepper, diced
4 clove garlic, minced
3 eggs, beaten
1 (4 oz) can mushroom pieces, drained
1/3 cup soy sauce
1 tbsp hot pepper sauce

In a saucepan, bring broth to a boil. Add rice. Reduce heat; cover and simmer for 20 minutes. Meanwhile, brown beef, vegetables and garlic over medium heat; drained and place in a large bowl.

In same skillet, cook and stir eggs until set but not still moist. Add to beef mixture. Fluff rice with fork and to meat, along with mushrooms, soy sauce and hot pepper sauce; mix well. Transfer to a greased 13x9 inch baking pan. Cover and bake at 350 for 30 minutes or until heated through. Serves 10
