BAKED SAUERKRAUT AND MUSHROOMS

1 quart sauerkraut, rinsed and drained
1 oz dried mushrooms, soaked for 2 hours in 1/2 cup water, save liquid and then slice
1 large onion, diced
1 large tart apple, diced
1 tsp caraway seed
2 tsp butter
1/2 cup packed brown sugar
Salt and pepper, to taste

Brown mushrooms and onions in butter. Add remaining ingredients, including reserved water. Pour into a buttered casserole dish and bake at 325 for 1 hour. Add more brown sugar for a sweeter taste or more water for additional moisture.
