BROCCOLI RICE CASSEROLE

2 cups rice
5 slices bacon, chopped
3/4 cup chopped onion
1 (10 oz) pkg frozen broccoli cuts, thawed and drained well
1 can cream of mushroom soup
1 (16 oz) jar cheese spread or cheese spread with jalapeno peppers

Prepare rice according to package directions, except omit the salt; set aside. Cook bacon until crisp and drain, reserving 1 tbsp bacon drippings in skillet. Add onions to skillet and cook until tender. Crumble bacon, reserving one-third for garnish.

Combine ingredients and place in a 2 quart casserole dish. Bake, covered, at 375, for 30-35 minutes or until heated through. Before serving, sprinkle reserved bacon on top of casserole. Serves 6
