BAKED STUFFED SOLE

4 sole fish fillets
4 tbsp butter, softened
1 lemon
Salt and pepper

Stuffing
1/2 cup butter
1 medium onion, chopped
1 clove garlic, minced
1/2 green pepper, finely chopped
2 ribs celery, chopped with leaves
1/2 cup cooked shrimp, chopped
1 cup crab meat
1/4 cup grated parmesan and Romano cheeses
1 1/2 cups fresh bread crumbs, approximately
Salt and pepper, to taste
1 lemon, squeezed

Rub fillets with butter, lemon juice and seasonings. Set aside. In a large skillet, melt butter and saute vegetables and garlic until tender. Remove from heat. Add seafood and both cheeses; blend. Add enough bread crumbs to make the mixture fairly dry but will hold together. Season to taste.

Put a spoonful of stuffing on each fillet, roll, secure each with toothpick. Place fillets in a buttered baking dish; pack extra stuffing around fillets. Drizzle with lemon juice and bake at 325, about 45 minutes, basting occasionally with butter to prevent the fish from drying.
