BAKED CRUSTY CHICKEN

Breading
1/2 cup dried bread crumbs
1/2 cup flour
1 tbsp chopped parsley
1 tsp dried basil
1/2 tsp salt and paprika
1/4 tsp pepper

Juice of 1 lemon
2 tbsp butter, melted and vegetable oil
1 chicken, cut into serving pieces

Preheat oven to 350. Combine breading ingredients in a small paper bag. Seal and shake to mix.

Combine lemon juice with butter and vegetable oil. Add chicken, turning pieces to coat. Working a few pieces at a time, shake the chicken in the coating mixture to evenly coat. Place on a baking pan. Bake for 45 minutes or until chicken is no longer pink near the bone. Increase oven heat to broil. Adjust oven rack 4-6 inches from heat source. Broil chicken until lightly golden,, 5-8 minutes.
