PEANUT BUTTER-FILLED BROWNIE CUPS

4 oz semi-sweet chocolate
1 cup butter, room temperature
1 1/3 cups sugar
4 eggs
1 tsp vanilla extract
1 1/4 cups sifted flour
3 level tbsp peanut butter
Preheat oven to 350. Melt chocolate in a double boiler; cool slightly. Cream butter and sugar until light and fluffy. Beat in eggs and vanilla extract until mixture is smooth. Stir in flour just to mix. Remove 1/3 cup batter in a small bowl and add the peanut butter; mix well. Mix melted chocolate in remaining batter.
If not using paper liners, spray muffin pan. Using two-thirds of chocolate batter, fill muffin cups a little more than half full. Top each with a small amount of peanut butter filling. Cover with remaining chocolate batter. The peanut butter filling should be higher than the center of the cup, as it tends to slightly sink during baking. Bake for 30-35 minutes. Cool in pan on racks about 3 hours or until completely cool.
