CHICKEN CASSEROLE SUPREME

Stuffing
2 cups unseasoned bread crumbs
1 cup chopped green onions
1/3 cup butter, melted
2 tbsp chopped parsley

Chicken
1/4 cup flour and cornmeal
1/4 tsp pepper
6 boneless, skinless chicken breasts
1 egg, beaten
1/3 cup butter

Sauce
1/4 cup butter
3 cups sliced mushrooms
1 (14 1/2 oz) can chicken broth
3/4 cup vermouth
1/2 cup whipping cream

Combine stuffing ingredients; mix well. Place stuffing in 6 mounds in an ungreased 13x9 inch baking pan.

In a shallow bowl, combine flour, cornmeal and flour. Dip chicken in egg and then in flour mixture, turning to evenly coat. Place chicken on top of stuffing mounds.

Sauce: Melt butter in a saucepan and cook mushrooms until tender. Remove from pan. Stir in 1 cup chicken broth and flour; mix well. Add remaining chicken broth, cooking wine and whipping cream. Cook until slightly thickened, stirring constantly. Stir in mushrooms and pour over chicken; cover. Bake at 375 for 1 to 1 1/4 hours or until chicken is tender. Serves 6
