SNOWY APRICOT BARS

1 (6 oz) pkg dried apricots
1/2 cup firm butter
1/2 cup sugar
2 1/2 cups baking mix
2 cups packed brown sugar
4 eggs, beaten
2/3 cup baking mix
1 tsp vanilla extract
1 cup chopped nuts
Confectioners sugar

Place apricots into a saucepan; add enough water to cover and heat to boiling; reduce heat. Simmer, uncovered, 10 minutes; drain. Cool; chop and reserve.

Preheat oven to 350. Cut butter into sugar and 2 1/2 cups baking mix. Pan in ungreased jelly roll pan. Bake until lightly brown, about 10 minutes. Beat sugar and eggs. Stir in apricots, 2/3 cup baking mix, vanilla extract and nuts. Spread over baked layer. Bake 30 minutes longer. Cool completely; sprinkle with confectioners sugar. Cut into bars.
