SLICED WALNUT SHORTBREAD

2 1/4 cups flour
1/2 cup confectioners sugar
1 cup butter, softened
2 tsp vanilla extract
1 1/4 cups walnuts, finely chopped and divided
1 egg white, beaten
Preheat oven to 400. Combine flour and sugar. Cut in butter until mixture resembles cornmeal. Sprinkle with vanilla extract and 3/4 cup chopped nuts.
Assemble mixture with hands and form into a ball. Divide dough into 2 pieces and form each into a log, about 1 1/2 inch in diameter. Brush with egg white and roll in remaining nuts. Cover with plastic wrap and refrigerate until firm.
Carefully cut into slices about 1/4 inch thick and place on ungreased baking sheet. Bake for 10 minutes or until golden brown. Remove from baking sheets and cool.
