CHICKEN AND NOODLE CASSEROLE

6 tbsp butter
5 tbsp flour
1 tsp salt
1/4 tsp pepper
2 cups milk and chicken broth
1 cup shredded sharp cheddar cheese
1 green or red bell pepper, diced
1 cup diced celery
1 cup noodles, cooked al dente, drained
2 cups chicken, cooked and cubed

Melt 4 tbsp butter; blend in flour and seasonings. Add milk and 1 cup broth; cook until thick and smooth. Stir in cheese. Saute vegetables in remaining butter and add 1 cup broth; simmer for 5 minutes. Add to sauce with noodles and chicken. Turn into a casserole dish and bake at 350 for 30 minutes.
