STUFFED BARBECUE BRISKET

1 (8 to 10 lb) brisket, trimmed
1 large bottle Italian salad dressing
1 large onion, chopped
1 head garlic, chopped
Salt, pepper, cayenne and garlic powder, to taste
Favorite barbecue sauce
Open pocket in brisket from the thin side. Mix onions and garlic together and season with salt and pepper. Fill the pocket in the brisket with the onion and garlic. Place in a resealable bag and pour the dressing over all and cover in the refrigerator overnight.
Remove brisket from refrigerator and prepare grill for medium heat. Grill the brisket for 1 hour on each side. Return brisket to a roasting pan; pour with sauce cover. Bake at 275 for 3 hours.
