SCALLOPED SPINACH

6 bacon strips, diced and cooked
1/4 cup chopped onion
1 (10 oz) pkg frozen chopped spinach, thawed, drained and squeezed dry
2 cups soft bread crumbs, divided
2 cups milk
2 eggs, beaten
1/4 cup butter, melted
1/2 tsp salt
1/8 tsp pepper

Saute onion in bacon drippings until tender. Add onion, 1 1/2 cups bread crumbs and remaining ingredients in a bowl. Pour into a greased 2 quart baking dish. Top with bacon crumbles and remaining bread crumbs. Bake, uncovered, at 250 for 50-60 minutes.
