CHOCOLATE CHOCOLATE CHOCOLATE CHUNK MUFFINS

1/2 cup butter
2 oz bitter sweet chocolate, chopped
2 cups flour
2/3 cup sugar
1/3 cup cocoa powder
1 tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 1/4 cup buttermilk
2 eggs
1 tsp vanilla
3 milk chocolate bars, coarsely chopped

Melt butter and bittersweet chocolate in the microwave until melted and smooth. Cool.

In a large bowl, whisk together the flour, sugar, cocoa, baking powder, baking soda and salt. Set aside.

In a medium bowl, whisk together the buttermilk, eggs and vanilla. Pour buttermilk mixture over dry ingredients. Pour melted butter and chocolate mixture over dry ingredients. Mix all together until just combined. Do not over mix. Stir in milk chocolate chunks.

Grease 12 regular size muffin tins. Divide batter evenly among muffin tins. Bake at 375 for about 20 minutes, or until a toothpick inserted in the center comes out clean. Cool for 5 minutes and remove onto wire racks.
