ALMOND WAFERS

1 1/2 cups flour
1/4 tsp salt and baking soda
1/2 cup softened butter and packed brown sugar
3 tbsp milk
1 tsp vanilla extract
1/8 tsp almond extract
1/2 cup sliced almonds, finely chopped
Sugar or frosting, for decoration

In a medium bowl, stir together dry ingredients; set aside. In a mixer, beat butter and sugar until light and fluffy. Beat in milk, vanilla, and almond extract. Add nuts and beat until well blended and mixture forms a ball. Cover and chill for 30 minutes. If dough is too sticky to roll, chill and additional 30 minutes.

Preheat oven to 375. On a lightly floured surface, roll dough to a 1/4 inch thickness. Dip cutters in flour and cut cookies. Place 1 inch apart on an ungreased baking sheet. Lightly sprinkle with colored sugar. Pack cookies with tines of a fork. Bake 9-12 minutes or until edges are firm to touch and light brown.

Cool cookies on wire racks. If desired, pipe frosting over lines in design on cookies. Store loosely covered if decorated; otherwise store in an airtight container. NOTE: If nuts other than almonds are used, omit the almond extract.
