SOUTHWESTERN STUFFED BAKED POTATOES

4 large baking potatoes, scrubbed
2 tbsp oil
2 cups chopped onion
2 cups shredded pepperjack cheese
1/2 cup plus 2 tbsp sour cream
8 strips bacon, cooked and crumbled
Salt, to taste

Preheat oven to 350. Bake potatoes for about 1 hour or until done. Heat oil in a skillet and add onions. Saute until tender and set aside.

When potatoes are cool enough to handle, cut them in half lengthwise and scoop out all but a thin layer of flesh from each half; reserving potato shells. Place scooped out flesh in a bowl and mash. Stir in sauteed onions and remaining ingredients. Mount potato mixture into reserved shells.

To reheat, bake, uncovered, at 350 for 15 to 20 minutes or until heated through. Serves 8
