CRAB STUFFED MUSHROOMS XVII

1 lb fresh mushrooms, stems removed and finely chopped
1/4 cup finely chopped celery
2 tbsp finely chopped onion and red bell pepper
1/2 lb crab claw meat
1/2 lb steamed shrimp, chopped (optional)
2 cups oyster crackers, crushed
1/2 cup cheddar cheese, shredded
1/4 tsp garlic powder
1/2 tsp Old Bay seasoning
1/4 tsp black pepper and salt
1 egg
1/2 cup water
Shredded Monterey jack cheese

Preheat oven to 400. Saute mushroom stems vegetables in butter for 2 minutes, or until moisture is absorbed and transfer to a plate, and cool in the refrigerator. Combine sauteed vegetables are remaining ingredients except cheese. Add stuffing mix in mushroom caps and place in a buttered casserole dish. Cover with shredded cheese. Bake for 12-15 minutes or until cheese is lightly browned.
