COFFEE TOFFEE CHOCOLATE CHIP COOKIES

1 cup butter, softened
1 cup light brown sugar
1/2 cup granulated sugar
2 tsp espresso powder or instant coffee
1 tsp salt
2 large eggs
1 tbsp vanilla extract
1 tsp baking soda
2 cups all purpose flour
11 oz semisweet chocolate chips
1 cup toffee bits

Preheat oven to 375. Mix butter, sugars and espresso powder with an electric mixer and cream until thick and pale. Add salt, eggs and vanilla and mix until smooth. Mix in baking soda and flour until blended. Stir in chocolate and toffee by hand.

Drop about 2 tbsp dough per cookie on ungreased cookie sheet, about two inches apart. Bake for 11 to 13 minutes until golden around the edges. Cool about two minutes before removing from cookie sheet.
