WINTER CHICKEN

4 bonesless skinless chicken breasts
1/2 cup chopped green pepper
3 cloves garlic, crushed
3 stalks celery, sliced
1 large onion, chopped
1 quart chicken broth
2 cups frozen mixed vegetables

Combine all ingredients except frozen vegetables in a large pot and bring to a quick boil. Reduce heat to low and simmer for about an hour or until the meat is fork-tender. Remove meat from pot, and when cool, dice and return to pot. Add mixed vegetables during the last 15 minutes of cook time. Remove pot top and cook uncovered until the broth cooks down to desired consistency. To thicken the gravy, combine 3 tbsp flour with 1 cup water, mix well to remove lumps and rapidly stir into stew while cooking. Serve over rice. Makes 4 servings.
