PESTO & SUN DRIED TOMATO STUFFED CHICKEN WITH FETA

4 chicken breasts
16 Sun Dried tomato slices
1/4 cup feta cheese
1/2 cup pesto
Flour
Olive Oil
Trim the chickens and run the knife along the middle to create a slit and then a pocket to stuff the breasts. Carefully work 4 slices of tomato, some feta and pesto into the envelope, massaging it all the way down.
Lightly salt the chickens as you heat a few tbsp of olive oil in a saute pan on the stove. Dredge the chickens into the whole wheat flour on both sides and saute them on medium low until cooked through.
