SPINACH BAKE

2 (10 oz) pkgs frozen chopped spinach, thawed and well drained
1/2 of a small onion, finely chopped
8 tbsp (1 stick) butter, melted, divided
1/4 cup heavy cream
1/3 cup grated Parmesan cheese
1/2 cup crushed butter-flavored crackers

Preheat the oven to 350. Coat an 8-inch square baking dish with nonstick cooking spray. In a medium bowl, combine the spinach, onion, 5 tbsp melted butter, the heavy cream, and Parmesan cheese. Spoon into the baking dish.

In a small bowl, combine the remaining 3 tbsp melted butter and the crushed crackers; sprinkle evenly over the spinach mixture and bake for 15 to 20 minutes, or until heated through and the topping is golden. Serves 4 to 6
