SPINACH AND MUSHROOM STRUDEL

3 tbsp olive oil
1 small onion, chopped
1/4 lb fresh mushrooms, sliced
1 clove garlic, minced
1/2 lb sausage, cooked and drained
1/4 cup chopped red bell pepper
1/2 lb fresh spinach, washed, chopped and drained
1/4 cup shredded Swiss cheese
Salt and pepper, to taste
4 sheets phyllo dough, thawed per pkg directions
1/4 cup butter, melted
3 tbsp dry bread crumbs
Heat oil in medium skillet over medium high heat until hot. Add next 4 ingredients and cook until vegetables are soft. Stir in next 5 ingredients and cook until vegetables are tender. Set aside until cool.
Preheat oven to 375. Place 1 roll of dough on work surface. Brush entire sheet with melted butter and sprinkle with some of the bread crumbs.
Repeat all layers of dough. Spread mixture over top and roll up starting on one short side into a log. Score dough into 1 inch slices. Brush with melted butter and bake 40 minutes or until lightly browned.
Set stand 5 minutes before cutting into slices. Serve and refrigerate leftovers.
