BACON AND CHIVE POTATO PANCAKES

2 slices bacon, fat trimmed, finely chopped, cooked and crumbled
2 lb potatoes, cut into 1 inch chunks
1 cup milk
1/3 cup chopped chives
3/4 tsp salt
1/4 tsp pepper
3 tbsp butter
1/2 cup sour cream
Place potatoes in a large pan and cover with cold water. Bring to a boil over high heat. Reduce heat; simmer uncovered until tender, about 15-20 minutes. Drain potatoes, return to pan. Heat the potatoes on medium until they are dry, about 2 minutes, stirring occasionally. Add milk.
Using a potato masher, mash the potatoes until fairly smooth. Remove form heat, stir in bacon, chives, salt and pepper. Place in covered container and chill until cold.
Form potato mixture into 12 patties about 3 1/2 inch round and 1/2 inch thick. Melt 1 tsp butter or olive oil to skillet and cook 3-4 patties until golden brown. Repeat with remaining potato mixture.
Keep patties warm in a low oven while cooking the other. Serve warm with sour cream.
Variations: Instead of mashing the potatoes, grate them and squeeze dry. Leave out the milk and stir in the sour cream instead of serving as a garnish. Finished as directed.
Variation: Make as direct except leave out the bacon and just have Chive Potato Pancakes.
