BACON AND CHEESE SCALLOPED POTATOES

6 tbsp butter
3 lb new potatoes
Ground pepper
3 slices bacon, cooked and crumbled
1 small onion, finely chopped
1 tbsp parsley
1 cup light cream, milk and grated cheddar cheese

Melt butter in a 2 quart baking dish. Peel potatoes, if desired, and slice. Arrange potatoes in dish and sprinkle with pepper. Top with bacon, onion and parsley. Pour cream and milk over potatoes. Top with cheese. Bake at 375 for 45-50 minutes. Serves 6-8
