STRAWBERRY SPINACH TOSS

5 cups torn spinach
1 cup sliced strawberries
1 cup honeydew or cantaloupe balls
2 oz Gouda or Edam cheese, cut into thin bite-size strips
1/3 cup coarsely chopped pecans, toasted
2 tbsp lime juice and honey
1 tbsp salad oil
1/2 tsp grated fresh ginger or 1/4 tsp ground ginger

In a salad bowl, toss together the first 5 ingredients. For dressing, in a screw-top jar, combine remaining ingredients. Cover; shake well. Pour some dressing over spinach mixture. Toss to coat. Pass remaining dressing. Serves 6 side-dishes.
