ASPARAGUS CASSEROLE BAKE

1 lb asparagus, broken into bite-sized pieces
1 1/2 cups water
1 1/2 cups chicken stock
1 cup uncooked long-grain rice
1 small onion, finely chopped
1/2 cup diced red bell pepper
1/2 cup grated Parmesan cheese
3 cloves garlic, minced
2 tbsp butter
1 tsp salt

Preheat oven to 400. Mix all ingredients together; pour into 2-quart casserole. Cover and bake for 20 minutes. Stir and then bake another 20 minutes. Serves 4
