SOUTHWESTERN SLAW

1 pkg cold slaw mix
1 onion, diced
1 red bell pepper, diced
1 jalapeno pepper, seeded and diced
1/2 cup oil
2 tbsp apple cider vinegar
1 tbsp white sugar
1 tsp cayenne pepper
Salt and pepper, to taste

Combine vegetables in a bowl. Set aside. Whisk together remaining ingredients for the dressing. Pour over vegetables and toss to combine. Cover and refrigerate at least for 1 hour. Serves 8
