LEMON CREAM CHEESE FROSTING

1 can sweetened condensed milk
2 egg yolks
3 tbsp lemon juice
1 tsp vanilla extract
Yellow food coloring
1 (8 oz) pkg cream cheese, room temperature

In a saucepan, combine first 3 ingredients and cook over medium heat, stirring rapidly until thickened for 5-7 minutes. Stir in vanilla extract and food coloring. Chill at least 2 hours.

In a small bowl, beat cream cheese until fluffy. Gradually beat in lemon mixture until smooth.

NOTE: This is really good on carrot cake.
