3 small red onions
11/2 lbs baby potatoes
1/4 cup virgin olive oil
2 tsp fresh thyme
1/4 cup mixed chopped fresh herbs (parsley, tarragon, dill, basil, chives)
1 tsp Dijon mustard
3 tbsp white wine vinegar
6 tbsp virgin olive oil

Brush grill with oil. Cut onions and potatoes and place them in a vegetable basket on the grill. Mix 1/4 cup virgin olive oil, thyme, and mixed chopped herbs and set aside. Brush potatoes and onions with herb mixture. Combine Dijon mustard, white wine vinegar and 6 Tbsp virgin olive oil and set aside. Place grilled potatoes in bowl and drizzle with dressing mixture. Serve hot or cold. Serves 6
