VEAL MARSALA

Category: Beef

Flour, seasoned with salt, pepper, paprika and garlic powder
6 thin slices veal scallops, about 1/8 inch thick
2 tbsp olive oil
3 large mushrooms, sliced
2/3 cup Marsala
1/3 cup chicken stock
1 tbsp butter

Heat oil in a large skillet. Dredge meat in seasoned flour and quickly brown in skillet. Remove from pan and keep warm in a low heated oven. In skillet, add next 3 ingredients and cook until liquid is reduced by half. Add butter and stir to melt. Serve sauce over cooked meat.
