GREEN BEAN, WALNUT AND FETA SALAD

1 1/2 lbs green beans
Bring 4 quarts salted water to a boil in a 6 quart saucepan over medium high heat. Add green beans and cook until crisp tender, about 4 minutes. Drain well, then plunge into ice water to stop the cooking process. Drain beans again and pat dry.
Dressing
3/4 cup olive oil
1/2 cup fresh mint leaves
1/4 cup white wine vinegar
3/4 tsp salt
1/2 tsp freshly minced garlic
1/4 tsp freshly ground pepper
Strip mint leaves from stem, wash and spin or pat dry. Combine all ingredients in food processor or blender and thoroughly blend. Chill thoroughly.
1 cup walnuts, toasted
1 cup diced red onion
1 cup feta cheese, crumbled
Sprinkle walnuts, onion and feta over green beans. Just before serving, pour dressing over beans, walnuts, feta and onion and mix thoroughly. Serves 6
