HAM HASH

1/2 cup butter
1 onion, chopped
1 clove garlic, minced
1 small green or red bell pepper, diced
2 1/2 cups finely chopped ham
2 1/2 cups diced and boiled potatoes
Salt and pepper, to taste
Melt 1/4 cup butter in a pan and saute onions, pepper and garlic until tender. Combine vegetables, ham and season with salt and pepper. Melt remaining butter in pan and spread out the hash mixture in the pan. Cook over medium heat until brown on the bottom, turn and cook the other side until brown.
