CRANBERRY SALAD

1 envelope unflavored gelatin
1 3/4 cup cranberry juice cocktail, divided
2 tbsp lemon juice
1/2 cup chopped celery and finely chopped pecans
1/4 cup sugar
1 cup chopped, unpeeled apple
1 (3 oz) pkg cream cheese, softened and cubed

Apple Dressing
1/2 cup applesauce, sour cream and salad dressing
1 tsp celery

Mix gelatin and sugar in a saucepan. Stir in 3/4 cup cranberry and heat over low heat; stirring constantly until gelatin dissolves. Remove form heat; stir in remaining cranberry juice and lemon juice. Chill until slightly thicker than consistency of unbeaten egg whites. Add apples and celery. Roll cream cheese cubes into balls and roll in nuts. Fold gently into gelatin mixture. Turn into 3 cup mold. Chill until firm. Serve with apple dressing.

Dressing: Combine ingredients and chill until read to serve.
