BEEF GOULASH

1 lb beef stew meat, cut into 1 inch cubes
1 medium onion, chopped
2 clove garlic, minced
2 tbsp cooking oil
1 (12 oz) can beer
3/4 cup water
1/4 cup tomato paste
1 tbsp paprika
1/4 tsp salt, caraway seed and pepper
3 potatoes, peeled and cubed
1 lb sauerkraut
2 tbsp snipped parsley

In Dutch oven, cook the meat, garlic and onion in hot oil until meat is brown. Add the beer and the next 6 ingredients. Cover; simmer for 1 1/4 - 1 1/2 hours. Add potatoes, undrained sauerkraut and parsley to pan. Cook, covered about 20 minutes or until thickened and most of liquid is dissolved. Serves 4
