CONFETTI CORN SALAD

5 cups frozen corn kernels, thawed
1 EACH red and green bell pepper, cut into 1 inch long strips
1 small red onion, chopped
1/4 cup red wine vinegar
1 tbsp brown sugar
2 tbsp vegetable oil
1/2 tsp dried oregano
1/4 tsp salt
Ground pepper, to taste

In a bowl, combine corn, bell peppers, and onion. Stir to combine. In another bowl, combine remaining ingredients and whisk together. Pour dressing over corn mixture and mix well. Serve at room temperature or chilled. Serves 12
