LIME TARTLETS

Category: Pies - Cream and Custard

2 pkg refrigerate pie pastry
1 (8 oz) pkg cream cheese, room temperature
1 cup plain yogurt
3 tbsp confectioners sugar
1 (10 oz) jar lime curd, divided
Whipped topping and lime slices, garnishes

Roll pastry acoording to pkg directions and cut 12 circles with a 2 1/2 inch round cookie cutter. Press onto bottoms and sides of greased mini muffin pans. Prick bottoms with a fork. Bake at 450 for 8-10 minutes or until golden brown. Cool for 5 minutes before removing from pans to wire racks.

In a large bowl, beat the cream cheese, yogurt and sugar until smooth. Stir in 1/2 cup lime curd and spoon into tart shells; top with remaining curd and garnish.
