CHICKEN AND RICE CASSEROLE - Easy

2 tbsp oil
2 lbs boneless, skinless chicken breasts, cut into 1 inch cubes
1 (4.5 oz) jar sliced mushrooms, drained
2 cups frozen broccoli cuts
1 cup instant rice
1 (12 oz) can evaporated milk
1 can condensed cheddar cheese soup
1 tsp Dijon mustard
1 cup shredded sharp cheddar or Monterey jack cheese

Preheat oven to 350. In a Dutch oven, saute chicken in oil lightly seasoned with garlic powder, salt and pepper. Add mushrooms and broccoli, and cook for 3 minutes. Stir in rice.

Blend together soup, milk and mustard; pour over chicken and stir. Sprinkle with cheese; cover with lid and bake for 25-30 minutes. Serves 4-6
