CHICKEN PENNE PASTA

4 boneless, skinless chicken breasts, cut into bite-sized pieces
2 tbsp olive oil
2 clove garlic, minced
1 large onion, chopped
1 (28 oz) can diced or chopped tomatoes in juice
1 small summer squash and zucchini, sliced
2 carrots, diced
1 (8 oz) pkg sliced fresh mushrooms
Salt and pepper, to taste
1/2 lb penne pasta, cooked al dente, drained
Grated parmesan cheese

While pasta is cooking, saute garlic and onion in oil until onions are soft. Over high heat, quickly saute chicken. Sprinkle with paprika and cook until nicely browned. Transfer mixture to a Dutch oven and add vegetables and tomatoes. Simmer until vegetables are tender. Season with salt and pepper. Add pasta and stir into sauce. Serve with grated parmesan cheese. Serves 4-6
