SAUTEED SPINACH WITH MUSHROOMS

1 tsp olive oil and toasted sesame oil
1 1/2 cups sliced mushrooms
1 vidalia onion, thinly sliced
2 cloves garlic, sliced
1 (10 oz) pkg frozen chopped spinach, thawed, drained and squeezed dry
1/2 tsp minced ginger
2 tsp soy sauce

In a saucepan, warm oils and add mushrooms, onions and garlic. Saute 15-20 minutes or until vegetables are tender. Add remaining gingredients. Cover and cook for 20 minutes or until spinach is hot. Serves 4
