1 large red onion
3/4 cup lime juice
1/2 tsp cayenne pepper
4 (1/2 inch thick) pork chops, boneless
Combine first 3 ingredients. Marinate pork in mixture, refrigerated, several hours. Place pork on grill, reserving marinade, and grill over medium-hot coals, 12-15 minutes, turning once. Heat marinade to boiling, serve with chops. Serves 4
