CIDER MASHED SWEET POTATOES

2 lb sweet potatoes, baked and cooled slightly
1 cup apple cider
1 large Braeburn apple, peeled and coarsely chopped
1/4 cup butter, softened
1 tbsp light brown sugar
¾ tsp salt
1/2 tsp salt
Dash nutmeg
Bring cider and apple to a boil in a small saucepan; reduce heat, and simmer 12-15 minutes or until very soft. Drain; reserving liquid and apples separately.
Return liquid to saucepan; simmer over medium heat for 6-8 minutes more or until thickened to the consistency of syrup.
Cut up potatoes in half lengthwise; scoop out pulp and place in a large bowl. Discard shells. Add cooked apple to potatoes and mashed until blended. Add butter and next 4 ingredients; continue mashing. Add enough reserved cooking liquid to get desired texture. Serve hot. Serves 4-6
