CAJUN YAMS

Potatoes
2-3 boiled yams, mashed with a fork
1/2 tsp salt
1/8 tsp cinnamon
1/2 cup evaporated milk
1/2 cup sugar
2 eggs, beaten
1/3 stick butter
1/2 tsp nutmeg and vanilla extract

Topping:
1/2 cup brown sugar
1/2 stick melted butter
1/3 cup flour
1 cup chopped nuts

Combine the potato ingredients until evenly blended. Pour into a greased dish and pat down. Prepare topping ingredients until well blended. Spread topping over yam mixture keeping the topping for 1/2” from the sides to prevent sticking. Bake 40 minutes, covered, at 350. Serves 8
