PECAN CHICKEN
Category: Chicken
1 cup flour
1 cup cracker meal
1 cup shelled pecans
1 tsp salt and pepper
2 tsp paprika and cayenne pepper
Combine ingredients in a food processor until ground and blended.
Egg wash (egg and a little milk)
1 lb boneless, skinless chicken breasts, cut into fingers, if desired
Season chicken with salt and pepper. Make a breading station with the egg wash and flour mixture. Dip chicken into wash and then into flour mixture. Pan fry in hot oil until browned on both sides.
NOTE: Good served with Pecan Honey Butter (in Miscellanous File)
