SALMON PATTIES

2 (7 oz) cans red sockeye salmon
2 (7-oz) cans pink salmon
3 eggs, slightly beaten
1/2 to tsp garlic powder
2-1/2 tbsp fresh lemon juice
3 green onions, finely chopped
1-1/2 tsp seasoned (or to taste)
Lemon pepper or black pepper
1/2 cup crushed soda cracker or butter crackers (or as needed)
1/2 cup all-purpose flour (or as needed)
oil for frying
Drain all the salmon, place into a bowl then flake with a fork. Add in the next 6 ingredients; mix to combine ( do not add in the crushed crackers). Refrigerate for 4 or more hours to blend the flavors.
Before frying mix in the crushed cracker crumbs. Place about 1/3 cup flour in a shallow dish. Carefully coat each chilled patty in the flour, then place onto a plate. Heat oil in a skillet over medium heat. Fry the patties about 3 minutes on each side or until lightly golden brown. Makes12 patties
