CHINESE SWEET AND SOUR SAUCE

3-1/2 tbsp cornstarch
1/4 cup cold water
1/2 cup ketchup
1 tsp regular soy sauce
1/3 cup white vinegar (for a sweeter and thicker sauce reduce to 1/4 cup)
3/4 cup water
1-1/4 cups sugar
1/2 cup packed brown sugar
pinch garlic powder (optional)

Dissolve 3-1/2 tbsp cornstarch in 1/4 cup cold water until smooth and combined.

In a saucepan combine the ketchup, soy sauce, vinegar, 3/4 cup water, white sugar, brown sugar and garlic powder; bring to a boil over medium-high heat whisking constantly. Reduce the heat to medium-low and continue to simmer for another 2 minutes or until no sugar granules remain. Slowly add in the cornstarch/water mixture to the simmering sauce and continue cooking stirring gently until bubbly and thickened. Cool to room temperature then refrigerate until cold (the sauce will continue to thicken as it chills).

Note: For a really thick sauce then increase the cornstarch to 4 tbsp
