PARMESAN TILAPIA

1 lb tilapia fillets
1/4 cup grated parmesan cheese
2 tbsp butter, softened
1 tbsp mayonnaise and lemon juice
1/4 tsp black pepper and garlic and/or onion powder
Pinch of seasoning salt

In oven, move rack to top position. Preheat your broiler. Line a broiling pan or rimmed cookie sheet with foil.

In a small bowl, mix well all ingredients, except fish. Set aside. Arrange fish fillets in a single layer on pan. Place pan on top rack and broil 2-3 minutes. Flip fish over, broil 2 more minutes or until almost cooked through. Remove from oven. Evenly coat top of each fillet with cheese mixture. Broil until top is browned and fish flakes with a fork, about 2 minutes.
