GREEN PORK CHILI

Category: Chili

1 tbsp unsalted butter
1 tbsp olive oil
1 1/2 cup diced yellow onion
4 large cloves fresh garlic, minced (1 heaping Tablespoon)
1 tsp green chili powder
1 tsp ground cumin
Salt and pepper to taste
1 lb diced pork (bone in or boneless pork chops, pork loin)
1 (28 oz) can green chilies, chopped
1 jar of salsa verde
2 cups chicken broth or stock

In large stock pot, heat butter and oil over medium heat. Add in onion, garlic, chili powder, and cumin. Generously season with salt and pepper. Sautee over medium heat until onions are soft, about 5-8 minutes, being careful not to let garlic brown. Add in pork and cook, stirring about 3-4 minutes longer. Reduce heat to low. Stir in chopped green chilies, green salsa, and chicken broth. Add water if chili is too thin. Cover and let simmer on stove or crock pot for at least one hour. Serve with warm flour tortillas.
